Ahh Yes Weed Hopper!! You are still learning the temprement of the beast. Give it a couple of more cooks and when you get it dialed in you will be Golden!! The guy in Alabama that was having the same issues just took Grand Champ and beat everyone by 30 points in last weeks contest. He E-Mailed me and said he had a problem with his cooker. When I opened the E-mail, he said that there were so many people asking about the smoker that he couldn't concentrait on cooking.

When you can grasp the pebble from my hand, you may leave!!

Please keep this in mind.

It certainly is an eye catcher that's for sure. It helps to have Jim (OSD) a member here and spicewine owner to help me out with temps....so far so good!

C'mon Gator, this thing is a beast! It needs a manly name. I like Stax but spelled STACKS.....hmmmm, do I smell a contest? Name Steers Smoker and get a jar of sauce or rub...... :shock:

As to the 2hrs to get to temp.... What if you added HOT (as in nearly boiling) water to the huge water pan. Seems like that would speed things up a bit.

The heating of the water is not all of it in a big smoker. It needs to burn a while to get all the metal inside heated up and the air flow to even out so that temps are even top to bottom and side to side. He's also letting it heat up slow by what he said about where he had the vents and stacks. Even on a large off set, you can heat it up to put the meat on but it will still take a while for the temps to even out.
Warm water works the best, It works the same as which will boil faster hot water or cold water? Cold will come to a boil faster than hot water.
Mine which is smaller takes about 1 hr to get to temp I want but about another 1 hr to really settle on to cruise. :D :D
