From Chuck to tri tip, I sear them first. As close to the coals I can get them. A couple minutes each side, about 5.. I then move the roast over to the cool side (away from coals or to the cook chamber of my smoker) to cook. Normally I keep the temp between 350 and 380 for this part. I let cook for about 45 minutes to an hour, depending on thickness. Should get most roasts (3-3.5 lbs) to about medium. Let it rest and slice it up.

Re: Vinegar
Thank you dragon. I looked online at some of those eye of rounds and hope to try one this weekend. If you had your druthers would you do a chuck or eye?

Tough call on Chuck or eye. If I had to make a call, I'd have to go Chuck.

Re: Vinegar
Old Smokey Marinade is 50/50 water/apple cider vinegar with mustard, olive oil and some spices. I use it on ribs, pork chops, chicken and chicken wings. Since finding this marinade I don't even use Stubbs anymore, this is way cheaper and very simple to make.
