Thank you, Mark, both of my sons have the equipment and ?patience? to make this so I'm gonna save this in my folder and see if I can talk them into helping me try a batch.

If you have Harrington's in your stores it makes great gumbo sausage. I also use Zummos old fashioned.
My favorite bulk sausage for my gumbo is Rabideaux's from Iowa Louisiana. They quit delivering to Texas back in 2006 and I now have to go to Vinton to buy it.
