Yesterday was relish day. Three pots were processing on the range, while these waited for processing. Lord save us from ourselves. 62 pints of Coney Island Sweet Relish. Lots off them going in Christmas stockings.

Okie, can you please say what's in ya recipe, is it like the relish we have here, tomatoes onions vinegar sugar etc, I CAN'T make relish. I've tried fail proof recipes , always with failures. The best one I have now is made by my sons neighbour who I swap stuff with. And I know how much work you have put in there.

Coney Dog Sweet Relish

Ingredients
• 1 quart chopped cucumber
• 2 cups chopped onion
• 1 cup chopped green pepper
• 1 cup chopped red pepper for color
• 1/4 cup canning salt
• 3 cups sugar
• 2 cups cider vinegar
• 1Tbs. celery seed
• 1Tbs. mustard seed
• 2 tsp. red pepper flakes
• ¼ tsp. turmeric
• ¼ tsp. nutmeg
• 1 ½ tsp. corn starch

Start by preparing jars, and get water in your canner heating.

Procedure

o Combine chopped cucumbers, onion and peppers in a large bowl.
o Sprinkle with salt and cover with cold water.
o Let stand for 2 hours.
o Drain well. Press out any excess water.
o Combine sugar vinegar and spices.
o Bring to a boil.
o Add well drained vegetables and simmer 10 minutes.
o Pack into hot jars leaving 1/4 inch head space.
o Wipe rims clean and process according to water bath canning directions.
o Process pints for 10 minutes

We did this recipe times 15. :shock: It made 62 pints, so the recipe as written will make ~4 pints.

OS, would this recipe be acid enough so you wouldn't have to process it, if the jars were kept in the fridge?
