I'll probably start hacking away at it later today. There is so much capsaicin released with all the sweating and chopping I have to take breaks.

Well, here goes. I'm just going to show you some pics of amounts and ratios. This yielded 12 quarts (me wife is canning as we speak) and a big ole pickle jar left for my immediate use (since OUP scored my last one). This particular batch didn't turn out hot enough so I added a few habaneros after the fact before jarring it up. Pics dont show it, but I added the boullion and cumin and coreander and the taste was spot on without using any salt. Like I said each one I tweak just a little bit, and I'm pleased with the results.

Do you hot water bath them after they're sealed in the jars :?:

Yes that is what she is doing right now. She uses a pressure cooker for pints, but these quarts wouldn't quite fit. They are sitting out cooling now.
