Half a hog ??

Friends of ours are butchering a hog. I haven't decided yet whether we are going to buy a half.....hanging weight 275 per half or go with a quarter. :dont:
I need to tell the butcher how I want it cut up. I never bought a hog before so I ain't got a clue.
I know I want chops cut up about a 1 1/2" thick. Also want to try my hand at curing and smoking hams and bacon.
Want ribs and shoulders for smoking. Beyond that ???

sounds complete to me, Wild Bill, EXCEPT be sure and plan on grinding ALL of the trimmings that aren't used during butchering chops/etc and make you some smoked link sausage ?OR? pan sausage if needed :dont:

I used to butcher my own pork n lamb. I'm not big on pork compared to lamb, but I do love pork done my way. If I got a half pig I'd do as you say bill, do a ham from hind leg, bone and roll front quarter for roast pork, then as you say loin chops but if it was me, I would give the loin section to a butcher and get him to bone and roll and make into pickled pork. You could giggle the recipe but it's basically a brine. The meat is slow boiled until tender. And I mean tender and served with apple sauce. My kids will cause a riot if pickled pork is not served Christmas day. Christmas day here is pork leg of lamb and Turkey rolled roast and all trimmings. The flap and other trimmings would go good in sausages. I'd be in like Flynn on a half. The flap could be used as pork belly and cooked Asian style with 5 spice. That's really really nice as well. I do it a few times a year.

Lmao, as I typed boil, I actually thought, who's gunna be the first to jump on this, I though sooner mighta beaten ya,lol.
Good call emm. This pork done this way just melts in ya mouth, it's cooked skin on as well, that's the best bit. Royal gala apple sauce I make as well. I LOVE Christmas day. Gunna be full on here I can tell ya.

Hanging weight on a half was only 160 lbs.
Just got off the phone with the butcher.
Told them I wanted to cure and smoke the hams and Belly bacon.
Loin is getting cut up into 1 1/2" chops.
Boston Butt or shoulders is getting cut up into 1 1/2" steaks.
Ground up Sausage meat unseasoned packaged in 1 lb. packs.
Any trimmings and lard also packaged.
Also got some meaty spares ribs

On the subject of hams, we've been buying a few raffles last 2 weeks, I've won 3 hams and 3 legs of lamb. Daughters on her way over to pick up 1 we offered her. We froze the rest. Leg of lamb I have just boned and rolled ready for lunch tomorrow. I'm taking a ham away for New Year's Eve and use the other at Christmas time. Lamb is s and p and rosemary herbs.
