Fried Collards ?maybe?

I'm thinking about doing some Collard Greens but frying them in ham drippings and some basil and sun dried mater oil that I got for Christmas - - - also maybe throw in some finely chopped green own-yawns and pieces of the smoked ham ????????????????????????????????? Whatcha thank

I either steam mine or slice thinly and cook in butter in a pot. I'm doing some in next few days. It's ready in the garden now.

I have to confess that when I did that ham last weekend and drained all of those great juices off it has been haunting me as to what I can use it for so fried greens got the vote. It'll be a few days before I do them so maybe WE can come up with a plan

Don't care for collards, but my wife makes the best fried purple cabbage in the world. She just uses bacon fat, onion, roasted garlic, shredded and chopped cabbage, and crispy bacon pieces. Seems like that should work well for collards as well.

Didja do it?
The only raw collards here that look any good at all, come in a bag, shredded. Is that cheating?

Not Yet, ?maybe? tomorrow - - - got Zuppa Tuscana planned for Friday to greet the cool front and the Collards need fixin fo sho.
I've never bought shredded Collards because WE DON'T HAVE TO - - - especially when you have bunches that looks like this one I plan on frying. Note: beer can is for size comparison only.
