Kettle question
Let me ask all you kettle heads a question? At what angle do you leave your lids? I have been purring my temp gouge and vents at a 90 degree angle to my fire. You know . the exhaust is half way between the meat and fire. Am I doing right?

Re: Kettle question
Are you asking because you are trying to use the gauge?
In my opinion the gauge on a kettle is worthless because it’s in the top of the dome and you need grate temps.
When I cook indirect or use the slow and Sear I put the fire on one side and the vents on the other so it draws the smoke across the meat.
Hope this helps.
