My Wife just asked if we could get to your place and back before dark :laughing7:  :D That looks perfect - - Texas Peaches ROCK

no high-jack intended but when we lived in the Hill Country, one year we decided to make some Prickly Pear Jelly and man was it good  but man was it a lot of trouble to harvest and process :banghead: :dont:
my wife could pick them up bare handed and peel but the little bitty small stickers on the outside ate me up  go figger that one :dont:

I never even heard of that; I've watched Cows eat them while sitting on a deer stand; cactus needles stuck all in their lips

Looks great but I'm wondering why didn't you do a finer chop on the veggies like a salsa ?
Now after showing my stupidity ?what do you put that on or eat it with?

I do Salsa but it is with tomatoes; that's probably 3 weeks off. This is basically sliced jalapeños: I add the sliced carrots & onions ; it reminds me of the relish El Chico would always put on the table with the salsa. There is also one clove of garlic in the bottom of each jar; it's Muy Bueno Amigo

So envious of you guys harvesting summer fruit and veges, winter here so not much happening. Beetroot might just about be ready to make sliced beetroot, my wife's fave. I prefer bought in a can, go figure. My family say I make the best Beetroot but I like it store bought from a can. Carnations still growing, quite late but that are on the deck.

It's really just starting here; that is unless the heat gets unbearable. What is Beetroot?

Rambo I don't know what you call it but this is it, a winter vege, I preserve it with malt vinegar, great as a side with a salad. I know this sounds weird but I have it in a sammy with sliced onion. My wife eats it soon as I open a jar.
