Hello all,
A few days ago I set up a few pork bellies in my fridge to cure.
I'm using a dry cure, Prague powder, salt and other seasonings, but for for some reason I completely forgot to add the sugar.
It's 5 days into the cure and I was planning to smoke it in 2 more days. Should I rise off the cure and re do it for 2 more days or should I just add brown sugar to the bellies now.
Appreciate the help!

I would go ahead and add the sugar now. I use equal parts sugar and salt...not sure what ratio you use, but you may want to add a bit more than normal since it'll only be in there half as long as the rest of the cure.
