Angus brisket

Visited my local Cash n Carry looking for a brisket. I've only smoked up Costco primes. I've had good luck with them but the amount of fat on the point is insane.

Cash n Carry had what where labeled IPB briskets. I couldn't find what grade they where. I'm sure it was marked on the package somewhere but there was nothing on the label.
They also had Star Ranch Black Angus. I grapped a 13#. Label never said what grade it was either. I was hoping it was choice grade. Looked at it again today in the fridge and right on the package was marked choice. :oops: :D


Im going to do a test run on it this week I hope. I want to see if there is a big difference between prime and choice :dont:
I Got a rather large cook coming up next month for our shop and I'm just trying to figure out what to smoke for our belated Grand opening.

I think you’ll be happy with that one. Looks to have decent marbling.
