A neighbor and friend down the street noticed some of my silly food posting on FB and he and his Wife gave me a couple of Cook Books that they didn't want or need. I gladly took them and gave them a jar of homemade roasted Salsa in return. Can't wait to really sit down and challenge myself with some new ideas and cooks.

I've just discovered a book my daughter gave me years ago while looking for a certain recipe. I made 2 things from the book and they were unbelievable. The book is 34 years old. One of my favourite requested entrees are chicken croquettes, they are made from a recipe I discovered about 38 years ago. Old is good..... Eh parts? Lol

Speaking of old, that word Croquettes is a tad ancient, even for me, and one that my Mom called her Salmon Patties (aka Salmon Croquettes)

1 of my all time faves and one everyone I know that have had mine, they love them. I make a batch of about 40 at a time and freeze. Chicken croquettes served with tomatoes and drizzled with American mustard. When it's my kids or grandys birthday they get to choose entree and main. All the adults choose croquettes.

Yo Pard, I fried some Salmon Croquettes today and here is what they looked like.
Ingredients:
Can of Pink Salmon (drained)
Cracker Crumbs
Finely chopped Own-Yawn
One Egg
Cajun Seasoning
Form into patties and dry dredge in Seafood Seasoning or Corn Flour.
Fry in hot grease until brown on one side and then flip.
After both sides are done then remove to paper towel.

Funny you should post these pics, my brother in law was here yesterday and we havnt seen him for 2 or 3 years. He leads a solitary lifestyle, anywho he was here catching up with family stuff. He likes my preserves so he took home with him some of my home made plum sauce and some strawberry coulis. Late last night my wife read a text he sent her , telling her he had salmon cakes like yours I think with plum sauce. Then he said he had ice cream with coulis. Funny old world isn't it.
