This sure does look and sound good and I'm gonna give her a go.
I would prefer finding some smaller pans, maybe 5" tp 6" if possible.
Do you mind sharing the mistakes you made so we might not do the same ?

I think you’re correct on the smaller pans. 2 5 or 6” would make 2 thicker buns. I erred in mixing the baking soda and cornmeal; should have mixed them with 2nd 1 1/2 cups flour. Also didn’t let it rise long enough because I was being pushed by the “I’m hungry “ crowd and had to move early

had "Zero" success on finding a 6" metal pan but the Lady at Kitchen Collections told me that these 5" x 1" Ceramic Brulee Dishes would handle Oven cooking just fine so I got 3 @ $2.99 each. However, I did not pick up some Corned Beef so it will be the weekend before I get to try the Sourdough Recipe and Sammies.

I just saw a Reuben Recipe that also pan grilled which is what I plan on doing the next time.
