Even tho I had planned on blackening one of these Catfish fillets, I got out voted and fried them in Beer Batter using the last of a pkg of Cajun breading that the late great Bondo Bill sent me. They couldn't have been any better unless I had just caught them off of my neighbor's pier and skinned them this morning. I did, however, get a chance to use the Creamy Pepper Sauce in some Dipping Sauce and I will be doing that again very soon. Still want to blacken one just for me sometime.
