Burnt Ends "Beginner"
I have never done any Burnt Ends but I'm ?kinda? thinking about trying some to take to my Oldest Son's home on Christmas Day.
I would like to have any and all suggestions as to what meat to buy and how to cook it. I can do them over Charcoal or in the Pellet Pooper, if needed.

The burnt ends come off the point of the brisket, which is my favorite part. I would talk to Greg or Matt about those. There’s probably many others who could help

I’ve done burnt ends as part of my brisket cook. If you don’t want to do a whole brisket you could buy a point but the cook process is about the same.
Another suggestion would be pork belly burnt ends. They taste amazing and tend to be an easier / more forgiving cook.

I don’t know if anywhere in Montgomery or Conroe that would sell him just the point

Walmart sells them up here. Not sure if that’s everywhere or year round but worth a shot.

Thanks Gents, if I can muster up the courage to try these, I want to be able to fix them Christmas Morning and then transport to my Son's 30 min away for the Family to ?enjoy. Therefore, the Pork Belly seems to be the best way for me to stumble into this without too much trouble. As far as Seasonings and Sauces goes, I'm going to use Suckle Busters Hog Waller Honey and their Chipotle Sauce so maybe the "Gator Gods" will smile on me that morning.

Perfect combo for seasonings. Might even add a touch of honey to the sauce. They travel and hold well ina crock pot.

Since I will probably do that on my ECB, I'm thinking I need to get one of these wire grill covers. Sure looks like it would make those 1" cubes easier to control and yet still get plenty of smoke and heat.

I use wire racks on the smoker a lot. Especially on smaller cuts. Just open the door and put the rack on the grate. Good call.
