Grinding Wagyu Brisket?

Anyone ever do this for burger? If so, would you please share your process?

LMAO! I'm not sure! I have a few pounds of wagyu leftover from a cook off. And was thinking about making burgers with it instead of putting it in sausage.

I thought that would be a crime to do but I could see making burgers out of it with the thinner scraps.

I've tried it with comp brisket trimmings, it definitely has a stronger beef flavor, but it has a different texture than plain hamburger and in my experience the meat tends to crumble or fall apart while cooking. maybe the fat content is too high on the trimmings I end up with? (usually more from the point)

I've wanted to try this but haven't gotten around to it. If you give it a whirl post some pics and let us know how it goes. I occasionally have some wagyu trimmings as well....

I turned an entire select grade packer into burger meat a while back and while the burgers were decent, they were no match for ground chuck.
The hard fat does not compare to well chuck fat.
If memory serves, the brisket needs to be tempered with chuck roast and chuck fat (or saved fat from other cuts).
IMHO, crumbly burger is due to not enough fat.

Methinks brisket grinds into chili beef better than into burger meat.
Stews better than it fries.

Saw this post yesterday and did a little research into what some may use to cut in with the Wagyu. Figured it was probably cut with something really lean. Everything I found was Wagyu and seasoning. Not to waste your entire stash I'd do the sausage test on it. Just grind a same amount grill it up and see what if anything it might need.

Good idea on the sausage method! Thanks! I'm going to try and fool with it on Sunday.
