Interesting post Rambo. Do you cut away the hard fat? What about aging it for 21 days in the refrigerator then grinding it. I bet that would be great.

Don’t know, I’ve never done it but I’m not paying $5 a Lb when I can grind Walmart Brisket for $1.96. I’ll probably trim some fat and make HB patties out of the Point and lean grind from the flat

It will be hard for me to grind'em all; it's my favorite part of the brisket

Well , I finally did it . Ground a 17Lb. brisket[1.96] and 3 beef chuck roast [2.47]. While I had the grinder going I thawed a fresh picnic I had bought for .87 and froze for this day . I made pan sausage . too tired to try any tonight but I believe it's going to be great ground meat.

I am going to start doing this. Grocery store ground beef is not only expensive but scary.

It's not difficult , just time consuming . I'll give y'all an honest evaluation on the ground beef when I try it. Gonna try the sausage this morning .
