First Try With Umai Dry Aging

I did a whole brisket in one of these bags not too long ago with great success. I used to have a modified fridge for dry aging and worked at a country club that let me use a spare walk in fridge for curing and the results were pretty comparable. I have recommended these bags to multiple people. How long you going to age it for, 30, 60?!

UPDATE:

Weighed the meat today. It's lost over a pound of moisture since April 9th. Firming up nicely. Also, today one of our local grocers wsa advertising bone-in prime rib roasts. Having room in my fridge, I got a 19.65 pounder to start aging as well. I cut off a 2.5 pound steak for supper tomorrow night and into the Umai bag.
Gonna be eatin good in the neighborhood in about a month

Sweet!! I bought a decent size monster refrigerator to dry age and sold it after finding a door leak in the gasket seal. No longer making them so I’m looking at a True tonight to see if it will work. I love the taste of dry aged beef. Good luck with it. I’m toying with buying a bone in next time. I did my strip the last time. Let us know how it works for you. Btw smart idea to cut off a section to eat before the withdrawls beef take effect.
