OK I'm a little confused here. I was at Costco and in between the bellies and pork shoulders, they had pork shoulder center cut. I can't find any information online of this particular cut of pork. I know the shoulder has three distinct muscles for it, but no idea which section would be considered " Center Cut".
Anybody have a guess on this one or can educate me on it? Curious to see if I can use it to make COPPO out of it.

If memory serves me correct and not many brain cells left, long ago I was told at a Steakhouse in Jersey that this is a larger cut of the Loin area. If it's what I think, once you cut it, you will see the smaller Tenderloin Cut attached to the regular Loin.
I only know them as Porterhouse Cut Pork Chops because of the size . If this is what I think, you have urself a great hunk of Pork right there.

I plan on making coppo with at least one of those. Taco Al Pastor will be the other used smoked and injected. I bought a number of tenderloins to make Lonza too. I need to fill the meat locker.
This section of meat you see has nice marbling throughout but not a huge fat cap.
