Grinding Meat

Went to Brookshire Bros and HEB this morning and HB meat was anywhere from $5/$7.50, I refused. HEB had fresh Brisket for $2.49. I picked out a nice one for $32. And will grind my own

That has always been my biggest reason for shopping there only if absolutely necessary or an emergency.
It's not just their meats either. Everything is priced higher. :dont:

That's normal meat prices here...even Before This Happened.

It was a couple years or so ago I got a big laugh.

The Alberston's here had a Buy one get 2 free on ribs.
I was ready to load up until I looked at the price.
It was $9.99/lb.
I got a good chuckle out of that.

I've been grinding my own ever since I hear about the pink slime places were adding to ground meats.

I wonder what the lean/fat ratio is on packer briskets.
Seems chuck is 80/20 and round is 90/10.
Right now here @ Krogers they have choice packers for !.67lb.

I trimmed and ground a packer once. I’d estimate the fat to be around what chuck is, 80/20. My grinder is a little small and between set up, trimming and grinding and clean up, I was 2.5-3 hours deep into the process

I went back and bought 2 Boston Butts; might as well make some sausage while I’ve got the grinder out. I also bought another brisket to grind. I’m just going to take my time and enjoy. I’ll post some pictures this afternoon

Boy, what a Day. I had to go dig my FIL's potatoes this morning. Some of you will recall he had a stroke not long ago. Finally got home and got all the equipment out. I've got to say, it's a lot of work but I'm hoping it will be worth it. I ground 2 briskets and wound up with 12 packages about 2 Lbs. I did one of the Boston Butts and ran out of gas. I got 4 packages with 3 large patties and 3 rolls I'm guessing are weigh a Lb/, Lb 1/2. By then I was so tired I just froze the other BB.

That is a lot of work after an already long day but the payoff will be some tasty meals down the road.

That will pay off for you nicely, Rambo! I've been contemplating the same thing, although I haven't found any of these cheap briskets that you boys have though!
