I'll introduce myself a bit, I'm from Georgia, decided to get into BBQ business :chef:
A bit of silly thing to do, because never been to Texas and never tasted the true magic, but nevertheless I'm gonna jump in and try it. I'd like to know menus, ANY info, TIPS, what cuts go to "waste", what Meat can be reheated (Like pastrami,etc... not to lose flavor), at the start I don't have much funds, so my expenses can kill me pretty easy. But anyways I'm gonna start here!!! making my smoker this week, will upload photos as well.

Good luck with your venture! Remember to keep having fun with it! Working on starting up a joint myself. Best advice I have received...if you want to make a small fortune in BBQ, start with a large fortune!
All kidding aside, cook your BBQ. Some will love it, some won't. Always reply positively to harsh criticism.
