Old Smokey 22" Beginner

New to this forum place never done one before. Looking for anything bbq related and hoping to find Old Smokey enthusiast. Been grilling on my old smokey for over a year amazed at the results I get. But still too scared to try wilder cooks. Looking for advice and inspiration. Image

For sure trying new things is a most to learn. My biggest problem right now is I either use too much fuel or too little fuel. Thanks for the kudos on my online handle. Nice play on words there. We'll be posting as much as possible with tried and true cooks and new experiments glorious or failures.

Welcome! I loved my little R2D2 smoker! (Hope you get the Star Wars reference there). Too much fuel or not enough? You can certainly have not enough, but I've certainly tested the limit of too much and I have discovered it's all about control. You'll certainly need enough wood or charcoal to obtain and sustain your desired temp, but where "too much" comes in is fire control. If you get a handle on your airflow and fire management, you can control how fast that pile burns. What would you consider a wild cook? I'm more intimidated by fish and poultry than I am whole hog or beef quarters. I believe the term wild cook to be relatively subjective.

Totally got the star wars reference there.

As far as wild cooks I'm talking briskets (I am use to see them get cooked on UDS and offset smokers). That's my main goal to do and master. I grill leg thighs and stuffed chicken breast all the time, feel confident on those part s of the chicken. I have yet to do a whole bird. Want to play with lamb heard lamb is great when smoked.

Welcome jalapeño!

I grew up watching my grandmother grill chicken on an Old Smokey. My first grill (many years ago) was an Old Smokey and I loved it!

Hopefully there will be some people with more recent experience.

Those tall legs are pretty cool. Is that an add on they offer now or did you have then built?

The legs are add ons. I stand at 6 foot 1 and didn't want to be hunched over the grill. Great add on for the old smokey. I listened to a review a guy left on Amazon.

Look into ways to modify it similarly to a UDS. A heat deflector below the grate for cooks like brisket and pork butt. I had mine set up much like you'd see a UDS today, long before they were really popular, and I'd crank out the same quality that you'd expect from a good drum now.

I own 3 22's an 18, and a 14 for our camper. The Old Smokey is about as good as it gets for a combination smoker slash grill. Here is a pic of my setup.

As far as modifying it for long cooks, that is unnecessary, all you need to do is use the snake method. I have done a 6lb. boston butt for 8-9 hours, as well as home made beef jerky for 11 hours. Over the last several years of cooking on all 3 sizes of Old Smokeys, I like the 22 the best as indirect is very easy on it due to the size. I never adjust my bottom vent, it is set slightly less than half open.

It is a rib machine for sure.
