New member from Illinois, but my heart is still in TX

Hey everyone,
We all know that Texas is the home of the worlds best BBQ. I'm originally from the Sulphur, LA area (Texas Border), but lived much of my life in Texas. Reluctantly now living in IL for family reasons. We have a pop-up restaurant in Monticello IL and run a catering business out of the Champaign area. We do a LOT of BBQ. So I'm always looking for great new ideas. Also open to sharing ideas.
