Howdy, Folks.
I'm an ArkaTexan or TexArkansan -however you'd like to say it. Texas Born, Arkansas Grown, and back in Texas now (with a little bit of Louisianan too). Hillbilly in accent and at heart, exiled to the cement jungle of DFW. I recently acquired a Weber Smokey Mountain smoker at no price, and I've parked it at my folks' place in Arkansas, since I cannot make a good use of it at my apartment in Plano. However, I visit my folks pretty regularly, and this Saturday, while dropping off the smoker, I smoked my first brisket. Happened to be the first time I've smoked any meat or used a smoker, too. I thought for sure I'd foul it up, but I did okay. Don't wanna put my experience with that in my intro post, so I'll mention it in a more appropriate forum.
Look forward to discussin' with y'all, and -hopefully- learning and honing a craft in the world of smoke. Thanks for havin' me.

Welcome and if you just salt and pepper anything then cook it at 225-250 until it's done you'll be ok
