Hi, Jeff from Cleveland, Ohio.
I’m a retired Fire Fighter of 30+ yrs
I own and maintain a12suite apartment.
I’ve been cureing and smoking Bacon for about 6 yrs.
I started smoking on an old horizontal 55 gal drum/ grill.
Along the way I’ve acquired a propane Smoke Vault ( not very good I have to add a charcoal/ wood fire for heat and smoke ).
A small Weber Smokey Mountain that works well but too small.
The biggest reason for joining is to hear about peoples smokers because I’d like to go commercial!
So a smoker ‘Certified’ UL, NSF for use under a hood.
I realize “Certified” depends on whatever Health Inspector I fall under!

I’m new to actually trying to communicate on forums, normally I’d just read and try to learn.
Maybe I should make this a new post but here goes ...
Along with making bacon I cure some pork belly as Pancetta, I’ve tweeked a recipe from Ruhlmans “Charcuterie”.
I have given away a lot of this product. At what point should i use a Nitrate cure ,#2 or as I’ve seen in some post on this site the use of Tender Quick?
