Hello all,
I have been smoking meat with my dad since I was a kid. His interest in good BBQ was passed on at an early age. I bbq'd all through college and bought my first rig about 10 years ago. I settled for an Oklahoma Joe (horizontal offset) from Academy. I immediately had a few upgrades made and it has been a pretty good smoker. Unfortunately the fire box has seen its final smoke and it is time for me to move on. I know that I can just rebuild the fire box, but I have gotten the green light on a new purchase from the little old lady so that's what I aim to do. I am currently debating on two Big Hat smokers that I saw at the Fort Worth Livestock Show and Rodeo last month. I was set on the Ranger (horizontal offset), but have switched to Marfa (Vertical offset). I think... My favorite meats to cook are probably pork ribs followed by pork butts and then brisket. I find myself waking up too much during the night to keep a brisket at the right temp so that does have a factor in my preference. I hope the propane option on my new smoker will help with that. I of course enjoy some good sausage and jalapeno poppers and will rarely fire the smoker up without throwing some drunken chickens on (cheap!). I dry rub everything and always serve a home made bbq sauce (Carolina Red) on the side if at all. I do however enjoy a good finishing sauce on my pork butt. I enter one small BBQ Competition a year and hope to do more in the future when the kids are older. I have won appetizers, but have never placed in ribs. I think the two things that I lack on are presentation and finishing the ribs with a crispy bark. once again, I think... Anyway, I enjoy all types of outdoor cooking as long as it include some cold beer and good laughs. Thanks for reading and I look forward to all the good things this forum has to offer.
