Hello from the "Big D"

New member "Max" here. I Live in Dallas (Downtown), and moved here from Miami about 5 years ago. My fiance bought me a brand new KJ grill for a birthday present and I can't wait to start cooking.

I've been cooking my whole life, including several years professionally and semi professionally. Coming from Florida my flavors tend to be citrus based and higher in acid (think Cuban, and Southern Italian vs. Mexican and Southwest). I cook a lot of fish, so am going thru some withdraw looking for fresh fish options here in Tejas.

Most of my cooking on the grill up to this point has been quick, high heat sear not low and slow BBQ; I am looking forward to learning from everyone. I am going to throw a chicken on the girll tonight, but my first big cook will be a whole brisket this weekend.

Now that I have my KJ I also want to get my rotisserie going so if anyone has any good suggestions where I can stock up on porchetta and shawarma in Dallas send them my way!

I don't know what else to say... looking forward to sharing with everyone!

I mean, I can help with other cooking questions... but as far as BBQ I am going to be asking lots of questions of the group here. Thanks for the warm welcome.
