Pics of the slab of meat before its on the pit- here are photos of it smoking at 220 for about 2hrs .

I really dont trim the fat cap ..i think it helped with the high heat at times.fat side down.

Welcome aboard. Looking forward to some finished cook pics. :D

Hope your brisket turns out better than my last one did. First time buying one that size and it turned out to be 70% fat.
