Hello guys!

Wait, don't shoot me on the spot, let me explain: I'm originally from Arizona and work since 2007 at University of Texas in Austin, I'm just there now because I'm holding conferences all accross the country until April.
I'm joining this forum because I've discovered different barbecue cultures in Europe over the course of the last 4 years, and I'd like both to share them with you ... and to learn more about Texan style BBQ, since I've always cooked meat as my father did, and never looked deeper into cooking styles.
Apart from that, I'm 42, teach international politics, am married and my main other hobby is my battle rifle collection.

I haven't photographed my BBQing adventures so far, but I'll make sure to document them this spring as soon as the season starts again. Right now, the best thing I've seen and tasted outside of the US of A is the Central Asian practice of cutting pieces of beef and rolling them in sheep bacon before grilling them; although I'm partial to the Russian-style shashlik meat that's marinated in vinegar as well.
