I just signed up and doing the intro post. I'm an 8th generation Texan and I love BBQ, so this seems like the place for me!

I grew up in South Texas, but currently live in North Texas, with some time spent in West and Central Texas in-between. I'm nearly shoutin' distance from Gator over in Coppel. I'm a mile or two from the new Dallas Cowboys corporate HQ. I grew up eating BBQ regularly (anybody remember Joe Cotten's down in Robstown?) but just in the past couple of years I decided to learn to make it myself. I've got a hybrid franken-rig I've put together that's probably considered cheating by the purists. At its core it's a Masterbuilt electric unit, but with an external box housing pellets for smoke. It lets me do cold or hot smoking. I've cold smoked cheese just a couple of times and it didn't last long once my daughter got ahold of it.

I got my education in Physics (Trinity U in San Antonio, plus Texas Tech in Lubbock) mumble years ago, but I've been working as a computer programmer ever since. That leads to me taking a scientific and technical approach to my BBQ.

I learned about this site because I was researching shoulder clod and how it used to be more popular than brisket in Texas up until the '60's. Now that brisket is rising in popularly around the country, I like the idea of going back to earlier roots and finding cheap cuts of meat that BBQ-ing can turn into tasty masterpieces.

I'm looking forward to learning from you folks around here as well as sharing what I've learned!

I have been all over this state and lived in a few different towns....
I had a relative there in Little Elm near you.
I have eaten a couple times at Joe Cotton's in Robstown, before it burnt down, where you if you asked for a second on the meat it was no charge...
you will find several good cooks on this board, do post pictures, and join in the fun!!

I used to be a programmer too. Nowadays only for hobby. Mostly Arduino, esp8266 and Amazon/Alexa integrations. Looking forward to seeing som tech stuff and BBQ combinations. Remember gadgets are always interesting.

Thanks, everyone. Such a welcoming group!

And I'm impressed with the international flair! I want to learn some smoked fish recipes from Norway and some lamb from New Zealand (I wish we ate more of that in the US. Love it!) as well as all the good beef and sausage recipes from my home state.

I was going to post a pic of my franken-smoker, since this is my thread and I know a few things about it, but it looks like I'll need to host the pic somewhere. Any popular services y'all use?
