Hey Guys,
I joined the site way back in 2014, or something like that, but didn't get active. So, I just revived my old account. Unlike before, I'm planning on getting involved in some discussions this go around. I'm here this time to be a participant, not a user...and believe me I know the difference, as I am very active in a couple of coffee forums (CoffeeGeek and Home-Barista).
Many years ago, I owned a low end barrel smoker, but my wife works in oncology and won't let me cook with wood anymore. Sadly, my dream grill is argentine style, but I'm stuck with gas. So, I've been through a few different gas grills...Entry level Weber, mid-level Charbroil, and a built-in KitchenAid that basically disintegrated over about 8 years.
We just recently finished an outdoor kitchen remodel that includes a Blaze Pro 3-burner, which I got to use yesterday for the first time. I want to treat this one right, so anyone who has some good tips please let me know! Most everything I cook outside is grillin' and I tend to use mostly direct heat. I do have a small smoker box, which I plan to use once in a while, and this new grill has a rotisserie, which I've never tried before...ever! Anybody with links to a good guide...it'd be appreciated!
I also have a useless to me infrared sear burner, which I'm planing to sell somewhere for a good price. Though this isn't the reason I'm on the forum, if anyone wants it, let me know. It's brand new, still in original packaging. I bought it to upgrade one of my existing burners on the new grill, but wasn't informed there was a different one to get for the Pro line, so this is the regular Blaze IR burner upgrade...which sells for $80 online.
Anyhoo, looking forward to some great discussions!

Howdy Neighbor, we all need a good reviving now and again. When I was in high school, the Sunday morning preacher always made sure I got REVIVED from my Saturday night sins, like it or not. I do seem to remember you popping on back when. Welcome home!
Understand about the spouse, if we can help let us know, on the grilling side I think we are all proponents of the mature clean burning wood fire cook set, but in the final analysis I used to burn some gorgeous meat with my old Lynx (the infamous Gas Belcher 5000).
Said another way, Fire is not FIRE, but Fire is STILL Fire. Savvy?

welcome back; I would have a difficult time not using some wood whether it was charcoal or pellets for the smoke flavor.
