Brand New To Forum

I'm Tim from Wisconsin, but with the weather we've had, often wish I was further west or south. I cooked on Kamado (Johnson family)(2) k-7's for years, but they disintegrated.
I lurked for 2 years at Yoder for their pellet stuff on a cart...but slowly have come around to KISS principal, and think I want a stick burner Witchita loaded-- no electric, no high tech, (except maybe for temp probe monitoring), and I have plenty of seasoned oak since I also heat cabin with wood.
I've lurked here for awhile, and I just want some input on probe recommendations.

Just pulled the trigger and brought home a Wichita loaded. A real beast. Will do first burn this morning, then oil it up. I've had white oak drying in a woodshed for years. I am really excited!
I know there will be a learning curve, but can hardly wait to do first baby backs and chicken.

My wife is on her way to the Dells right now. They are having a bday party for an older sister of hers that is turning 60.
