They burn it down. I aint much of a mesquite fan myself but it seems to work for them. :D

Of course being from East Texas, I like pine...yellow pine, myself. :shock: :lol:

The rub is for sale at the joint, it has a little more that S&P, had gaalick, maybe a few other odds and ends. Maybe I needs to do a little more studing on this particular aspect of Coopers. :wink:

Mesquite is real particular to the geography of where it's grown as to whether it is worth a flip. Best come from deep S. Texas..Corpus..Kingsville. Worst comes from the DFW area. The rest hits somewhere in the middle. Should be starting to get into the good stuff around Llano. Know the version they have around San Antone is purty good stuff.

Post Oak, Pecan, Red Oak, & Hickory.
Sometimes a mix, rarely all Hickory...too strong for long hours of smoking.
And I think Gator is right on that if you pre-coal the mesquite it is much less stinky.

Oh and my favorite Nascar driver...Marty Robbins.

And my favorite North Texas (Tundra) joint = Davids B-B-Q Arlington.

My favorite rub....well a foot rub is a mighty close second. :lol:
Actually I'm a Dalmatian guy. Just White Salt & Black Pepper Altho my wife prefers adding Lawrys seasoned salt. And so if I expect my feet to get rubbed second, or at all...she gets her way. :o
