what's so great about kansas city bbq?
just left kansas city back from the big 12 tournament. went to gates and jack stack, gates had bad sauce, so so ribs and dry sliced brisket. i did like their chopped brisket with burnt ends, fatty and lean parts. jack stack was upscale bbq. had a shortend beef starter (1 rib) $12.50. got a full slab spareribs with beans and cream corn for $26 feeds two. glad to get back to dwf for real bbq. why the hype?

My wife stopped off at Oklahoma Joes Nd picked me up some burnt ends while passing through last year. The meat was great. It was my first taste of burnt ends. The sauce was so sweet I couldn't stomach it. I improvised, broke out a bottle of The Salt Lick Spicy Sauce and had a fine meal.

I have eaten a lot of KC BBQ and for the most part it is just OK. I think folks like the thick super sweet sauce, I don't.
HOWEVER I don't know what you mean by "bad" but Gates sauce is unlike any other KC sauce and is easily my favorite, more of a Texas sauce than most from here.

Am I alone in thinking the Best BBQ comes off our pits, I can count on 1 hand how many Raunts I have eaten at have met or exceeded my expectations. I have eaten BBQ N to S & E to W all across America. It seems to me the best ones are walk ups or git & gos or crude dining served on Butcher paper that make you smell like a pit master all day after a visit. I do believe the absolute best to be had anywhere is with in 150 mile radius of my front gate.
Never met a cow I didn't like with a little salt and pepper.

Blu is spot on. +1. I think for the most part, the commercial guys just can't (or won't) put in the quality, because cooking for the folks or the comps is a whole different standard above making a product that can sell at a decent profit margin. The exceptions (Franklin's, etc.) are rare and true.

Bobby: "No."
Hank: "Well, there's really no wrong way to do it."

I wanna throw in with Blu, now that I have been smoking for this last year and seem to be getting the hang of it, I find that myself and wifie, are having a hard time going to BBQ joints now, and there are not that many in this area that I would drive more that 5 miles for. But when we do we are always comparing the food to what comes off our smoker and many times we agree ours seems better, there is just something about smoking meat at home. Anyway not trying to blow my horn here, and I don't know anything about KC bbq.

IMO, I think BBQ is really a simple food that Q joints either get it right or they don't. The average joe doesn't know any better but folks like us do. It's a regional food too, so that makes it more complicated.

I do not travel that direction all that often but on several occasions have had 20+ plus minute waits ( @ places w no line) for simple orders??
I wanted to yell "I'm from Texas, it's either smoked by now or it is not"!!
