Yeah, the same thing happened to me my first try... I had trouble with maintaining 225. The the temp spiked a few times and another where it dropped dramatically in an unexpected pop-up thunderstorm..... On my second try at it, I maintained a continuous temp between 215 and 235, held 225 most of the time with the fluctuation and the ribs turned out perfect.......for sure a 6 hour cook requires good heat management, otherwise they can get overcooked real easy....

This weekend I did a rack of spares 4-1-30minutes using similar technique/recipe. Turned out great. The rack of ribs that you start with is key. Big, meaty rack of ribs does well at 230-250 for 4-1-1 or 3-2-1. If the ribs are a bit skinny 3-1-1 might be better to prevent dark/dry results. I like the bend test for doneness. Ribs will get dark quickly with too much sugar in the initial rub and/or thick white smoke.
