Dying for some of Trigg's ribs!

Postby Cynd75 » Sun Jul 22, 2012 8:40 pm

Hello y'all... Wanting to plan a weekend trip from San Antonio to Alvarado, TX to try some of Johnny Trigg's ribs. I was doing some Internet research for the location of his restaurant, but it appears he may not have an establishment. :dont:
Anyone here know for sure? I appreciate any and all feedback.

Ask Redneck, he is wired into the comp scene. Send him a PM.

Was thinking the same thing:
Sprinkle with rub
cook a while
wrap with a whole bottle of parkay and a quart of honey
unwrap and sauce before turn in

Hey it works for Johnny, what do I know

He also said on tv that he has never and never will "inject" a piece of meat

Does he even glaze his ribs? They look glazed from what I've seen on pitmasters.

check out this link if you are interested in Trigg style ribs. It gives the ingredients and a how-to video. I followed the video right down to the last detail and they turned out great!! Finger-lick'n-good! :laughing7:

Very fall apart tender, 1 rack fell apart on me.

The taste was good, but they seemed a bit dry to me. I think that last hour did me in.
They looked great coming out of the foil.

I think my heat may have rose to 300 that last hour.

I would do it again but make some changes to fit my smoker. Maintaining 230 is tough
