For those who don't know it's a butcher shop in Plano, but starting November 13th they will start selling BBQ on Wed only. I'll report back next week.

Re: Matador Meat Market
Today I got the brisket. It looked pretty and would be considered good for most backyard cooks but was very dry. The sauce they have to eat with it wasn't edible due to the amount of sugar in it. Is it better than dickies? Yes, better than other Frisco/Plano BBQ places such as 3 Stacks and even Rudy's? No

Looks kind of like they shorted you on the meat.
Thank You to all the fine folks here for all the tips and advice so I can now smoke a chunk of meat and folks actually eat it.

Re: Matador Meat Market
I have been to Matador once and won't go back. Their prices are so dang high. I also spent some time with the owner at a comp and he really rubbed me the wrong way. That sandwich is pathetic and they probably charged you $8. If you want to get some meat from a meat market, head over to Kirsch's in Plano It's on Parker, East of the tollway about 7 miles. It's a little bit of a drive, but it's a great shop. It's an old school meat market that has about everything you could ask for and if they don't have it, they will get it. They also sell every kind of wood you can think of for smoking. It's truly legit. Every Thursday they come out with their specials that are usually around 25% off a few select cuts. Give them a try, and you won't go back to Matador again.

Re: Matador Meat Market
The only thing I can recommend Dickie's for is the free ice cream (if they still do that. I haven't darkened their door in years because the barbecue was always, IMHO, dramatically subpar).
BE WELL, BUT NOT DONE

Bobby: "No."
Hank: "Well, there's really no wrong way to do it."
