I guess we went on a bad day last fall. But our experience was the food was almost inedible. In fact the spare ribs were. Still bloody, tough, full of unrendered fat & tasteless, almost raw. The beef rib was good but the brisket was extremely tough & dry. Killens and Louie Mueller were leaps and bounds mo betta.

+1 w Big Dave. Loved the place (Blacks), but my day the meat was pretty average. Sorry to say Louie Muellers was the same, in fact the beef ribs we got were below average. Coulda just been a bad day.

The day the rib in my face picture was taken we hit the big three in Lockhart , Smitty's, Kreuz and Black's.
Our group consisted of BBQ enthusiasts from all over the US some accomplished comp folks others backyarders. Two were KCBS judges (from Virginia, California). All in all the ratings were good the biggest disappointment was the Kreuz sausage.
The dino bone at Black's was loved by all.
The KCBS judges were slightly more critical than I but admitted they were judging as competition and knocking for too tender etc. I judged as meal fare. They said that the Q would not stand a chance @ the Royal etc. and I am sure that is true but that is not the goal, a restaurant that served competition class Q would probably die in Lockhart.

My recommendation is go to Lockhart and try it yourself but don't miss the history lesson of hitting Smitty's and don't miss the dino bone @ Black's.

They are all good IMHO. Everyone has their favorite for various reasons. My personal favor is Blacks for the beef ribs (not offered at Smitty's or Kreuz) and the variety of sides (creamed corn is much ghtyfine). But when we had visitors from Scotland there this past summer, we brought them to Smitty's for the experience.

City Market just down the road in Lulling is excellent as well.

The only others I have tried is Killians and Salt Lick (no sauce please). Gotta love Texas BBQ. So many more to sample.

I'm one of those that are "iffy" about Black's. We've gone there several times over the years and overall been underawed (is that a word) by the selections. Beef was dry and stringy, sausage was ok, better than Kreuz's. Sides were kinda like Luby's.
We went to Kreuz' last year. Was uninispiring. Smitty's is still our go to when in Lockhart. We tried the Chisolm Trail once, decided that was enough.
City Market in Luling is good, short jump off of I-10 going to or coming from San Antonio. Spare ribs are the best around.
