Where Is The Cornbread?

Am I the only one who likes cornbread with my cue? I can't find a BBQ joint in the Metroplex area that has cornbread. Has anybody found one? :banghead:

I love and make good cornbread BUT I have never had or wanted it with "Q" :dont: :scratch:

My interest in cornbread has recently been piqued again. I love it with beans, which are a non-negotiable side for BBQ, so it seems like more places would serve it. I think if I ever open my own joint I'm going to serve Cornbread as an alternative to white bread. :)

I tried a recipe last weekend, Cholula Swirled Cornbread. I used a couple of Tbsp of Meat Church Rub in the batter and swirled Cholula on top (like you would do the chocolate on a cheesecake) and it was delicious.

Is there any good receipt for cornbread?
I don´t know that stuff, but would like to try it

This is the one I use regularly.

1 cup corn meal
1 cup flour
4 tsp baking powder
1/4 cup sugar
1 tsp salt
2 eggs
1 cup milk
1/4 cup butter
Melt butter in a cast iron skillet @425
Sift flour, sugar, baking powder and salt. Lightly beat the eggs, add milk. Combine the wet and dry and pour in hot skillet.

Bake @425 for 20-25 mins


Additions I regualarly do, chopped jalapeno, cheddar cheese and fresh yellow corn.

Pretty basic reciepe but turns out very good.

I've wondered about this in the past. Came up with it was just one more thing the kitchen had to prepare in addition to the regular sides. Besides it's much easier to reach in the bag and pull out a couple slices of plain-o white bread.

I like corn bread with my BBQ also. No idea how authentic that is in Texas... Maybe I inherited it from the Tennessee side of the family, LOL. Still like it though.

Usually warm with a little butter, but it is also good cold.

You mean you guys don't eat Cracklin Corn Bread? I have it all the time up here in Noo Yawk.

I didn't say that I make it...rather I have a deal with my neighbor lady (a former Florida gal). When I smoke a pork butt, I give her some of the pre-smoked skin. She dries and seasons it...minces it somehow, and then gives me some Cracklin Corn Bread. So we work together in joint operation.

Absolutely delicious.

I've had Jalapeno Cornbread, Shrimp Cornbread and even Sausage Cornbread. I never heard of Cracklin Cornbread. :scratch: Sounds good though 8)
