I'm in San Marcos for a convention and decided to give Hays Co. BBQ a try. I walked in and they were sold out of everything but brisket and sausage. I got a half pound of brisket and some jalapeno cheddar sausage with some crackers, pickles and onions. I was not disappointed. Brisket was moist, tender, and Smokey. Lightly seasoned to let meat speak for itself. The sausage, well....it knocked my socks off. Far superior than the jalapeno links at Kruez's, in my opinion. I'll definitely be back. If the meat the customers didn't buy out was that good, I can't wait to try what they were sold out of. Image

great lookin sausage casings and the brisket looks good too was gratified to see the truly authentic Big Red accompaniment. Looks like a good feed Donk, I've put it on my bucket list.

Hays Co. is in my top 2 or 3 favorite BBQ joints in the world. Top notch.

My wife and I were in San Marcos a couple weeks ago. Went swimming in the river and decided to try Hays Co BBQ that evening for dinner. GEEZ O PETE, that was some of the best brisket I have ever tasted. I got 1lb off the point that we shared and it was so tender and just absolutely tasty. We also ordered the plain sausage and well, to me it wasn't anything to write home about but it'll make a turd I guess. The feller what served us said the brisket is smoked with post oak.
