I am grilling up what I hope are some fine Malibu chicken breasts tonight.
For those uninitiated, that's a boneless/skinless breast topped with sliced
deli ham, Swiss cheese and a pineapple ring. They are marinating in some
Sucklebusters Hoochie Mama rub as I type.
Anyway... I just mixed up what I think will be a good basting/finishing mop
for the breastages. I'll work up a blog post later, but in the mean time,
here it is:
Ingredients
4 Tbsp Unsalted butter, melted
1/2 cup Pineapple juice
1 Tbsp Plain yellow mustard
1 Tbsp Honey
1 Tbsp Molasses
2 tsp Worcestershire sauce
1 tsp Chili powder
Method
Combine all of the ingredients in a small mixing bowl and whisk to combine.
Brush/mop on your carnage of choice during the last 5 minutes of cooking.

It's just a B/S breast that is grilled, mopped and topped with sliced deli ham, Swiss cheese (I used Boar's Head baby Swiss), and a grilled pineapple ring. I put the ham on the breast as soon as I flip and mop it. I then mop the ham and add the cheese and pineapple just about a minute before it comes off.
I dusted the pineapple rings lightly with cinnamon sugar about 30 minutes before I grilled them. They are grilled along side the chicken.
Serve with a drizzle of the mop.
