Chimichurri Sauce

1/2 to 1 c. cilantro loosely packed
8 garlic cloves large peeled
1 c. roasted red pepper chopped
1/4 cup jalapeno peppers, seeded and diced
2 T. key lime juice
2 tsp. lime zest chopped
1 T. x virgin olive oil

Combine ingredients in bowl of food processor fitted with steel blade. Pulse until pureed. Cover - let rest 30 minutes. Salt to taste before serving.

Notes~
Chimichurri goes great with any meat or seafood. Use as a marinade or a zesty dipping sauce.
This chimichurri sauce accompanies fried plantains to make a delicious appetizer.
A mistake is sometimes a great creation
