Make Caramelize Onions powder

Postby PapaG » Thu Sep 09, 2010 2:54 pm

Can you Caramelize Onions, and then grind them up to a fine power? Use onion flakes, or onion powder and do the same thing? I Caramelize Onions and use them on stuff when I cook in the house...

I have not had time to try this, as I just thought about it today.

I think you would have to caramelize the onions and then dehydrate them and grind them to powder.

Toasting dried onion flakes gently in a dry pan over a med flame will give a nice color and flavor like you're looking for. If you want to make a powder just dry the toasted flakes well and grind in a coffee mill. Toasting powders will burn them in my experience and it's quite easy to burn the flakes too if one is not careful. But it will be impossible to dry and grind freshly sauteed caramelized onions due to the oil used. Just my 2 cents.

Cheers
