Not too funky but I use sugar cane for smoke on poultry

I have been a big fan of using my home grown crushed red peppers. Consisting of Serrano, Jalapeno and Cayenne.
Nothing as interesting as the fish sauce

I have only used it on poultry and I mostly cook poultry indirect. I simply put it on top of the lump right before I put the poultry on.

I strip the loose leaves, cut at the joints, split the cane, then freeze. I use it straight from the freezer - adds a light flavor.

I also have used sugar cane for chicken. Perhaps after reading this, I will rethink how I do it. I have never frozen it. Probably a good idea.
I do use it offset from the chicken. I have also used the sugar cane for grilling pork chops.
I also knew a man who slathered his brisket with catsup instead of mustard before putting his rub on. He did very well with his method. He got a boat load of throphy's for his brisket. Probably would be still doin it, but he met an untimely death in an accident. I inherited all of his trophy's. They are a prized collection for me.
I have never tried it on my briskets, but it worked for him.

BBQ Mike - The only reason I freeze is to keep some handy and keep it from rotting :(

I have some in my freezer going on two years :)

I bet it's good on pork - just never tried it.

I don't know how funky it is but I don't see many people around here use it;

I tuck whole apples in some of the meat when I smoke it. It comes out great and I think it helps with moisture.

Fish sauce as well. 3 crab brand. Use it to make nuoc mam, a Vietnamese dipping sauce. Works great as a glaze on fried chicken wings.

Favorite would be pepper, any kind of pepper or combos there of but favorite funky ingredient? Don't know if I have one. I've had good luck with cloves, ginger root, cassia bark, garam masala, coconut milk, juniper berries, thyme or sage as key ingredients. Also have gravitated to using sea or Kosher salt instead of table salt. Still playing with a pork rub with mid-eastern undertones with a wee bit more than a tad of heat. Seldom use any refined sugar in my cue, sides sometimes just require it.

Not really funky, but I love the flavor Rosemary adds to just about anything. We grow it ourselves.

1 cup fish sauce, 1 cup sugar, anf 1/2 cup sambal sauce is used to marinate pork, chicken, or beef prior to grilling

Use a paste of rosemary, sage, garlic, salt, and canola oil to make an italian rub for pork or chicken

Brush chicken or ribs with Indian Tamarind Date sauce just before serving....bake until until it sets

Quinoa is my latest favorite grain. Substitute for rice pilaf.

Anchovies in anything tastes good.

I have used liquid smoke in my baked beans before

Maple syrup. I use it in all my sauces. Great in beans too.
