fine or granular?
I'm working on "my" rub, going to finalize it if you will.
I made a batch with coarse ground and or granular when available, and it just plain tastes better. but my norm is a fine cut everything, and it rubs better.
what do you prefer?

I like a finer grind. I think it gives more flavor, because of having more surface area. CF

I am in the fine camp as well.
Once I decided to try cracked pepper on a pastrami after the long smoke the pepper had a texture identical to gravel, tasty yes, pleasant no.

I agree with New Country. It depends on how I'm goingto cook the meat. I like granular for grilling. I think the high heat melts it better into the end product. Smoking I like the fine powders. I find this alows for the flavors to meld together better and always ends in a great bark and product.

I have been known to split the ingredient, 1/2 fine + 1/2 coarse...Im just sayin...

When Q'in I always prefer fine if given the choice. Heck I've been known to run seasoning thru a spice grinder just for the sake of making it finer ... I guess to each his own, but it would stand to reason that the finer the rub the better it would penetrate into the fibers of the meat in my opinion.

seems like fine works better for a more even coat and bark on bbq. I would use a more granular rub when grilling.
