What is a finishing sauce?

Postby atcNick » Sat Apr 23, 2011 5:39 pm

I've seen lots of references to this but I don't know what exactly it is and how it differs from BBQ sauce. Can someone shed some light for me? Thanks.

Our Honey BBQ Sauce is a finishing sauce...its made to baste on the last few minutes of cooking, just long enough to "firm up" with the heat and add a layer of sweet flavor to the meat. In this case ours also adds a nice red color to the meat.

Is a finishing sauce made specifically for that purpose or is a "finishing sauce" a term to describe the way a BBQ sauce is applied?

As for my Honey BBQ Sauce - yes and yes. It has lots of sugar (by design) and it should be put on a at the end of a cook to "set up" or thicken.
