I was tired of buying to little jars of Bulgogi sauce due to the price and percieved lack of freshness so I went about making my own. There is some kind of chemical in pears (also present in Kiwi) that helps to tenderize the meat. The Mrs did a tour of duty in Korea back in the day, she says the marinade is good to go.
Into a blender put:
5 or 6 med. cloves of garlic, crushed and peeled.
1 Pear, peeled, quartered and cored. An Asia Pear would be the best but I used a Barlett Pear.
1/4 cup light soy sauce or Japanese soy sauce.
1/4 cup white wine (I used Chardonnay). Purest's would use rice wine. (saki)
2 TBSP (or more-depends on how strong your soy is) sugar. I used Turbinado.
2 TBSP Sesame Oil
2 Scallions, washed and coursley chopped.
Process until mixture resembles applesauce. Add more wine if needed. If on the salty side, add more sugar. Makes a little more than a cup.
Pour over thinly slice beef and refrigerate for an hour to overnight. Put beef on skewers, grill. Enjoy.
