wondering if anyone can suggest a way to thinken up a bbq sauce that wont add more sweetness to ..if thats possible...I have made a really good sauce i just want it to be a tad thicker in consistancy...let me know :geek:

Sorry Q, never had to "thicken" one up before....Dan will come along and give some insight on it..... :dont: :lol:

LOL....well i used all the good thickeners..honey - molassas - ketchup - and a bit o maple syrup but still not as thick as id like it...and its all good...im getting there...

Corn starch - add corn starch to water to create a thick paste, then add the paste to your sauce. It will thicken when the sauce boils. It will make the sauce slightly lighter in color, no determinable change to taste.

Xanthan Gum - same usage directions, s a better suspending agent (its what we use) and even works if you don't cook your sauce,

-> In my experience corn starch recipes tend to separate over time and Xanthan Gum does not.

Also - just cooking down the sauce will evaporate water and thicken it naturally.

In a hurry use the corn starch but if you have the time just keep cooking it and evaporate off some of the water and it will help concentrate the flavors

I use corn starch and I add a little canola oil for shine.here is my sauce recipe to give you a little guidance.

Blu's Brisket Gravy


2 cups cider vinegar

1 cup water

1 cup catsup

1 cup sugar

1 teaspoon cayenne pepper

1 teaspoon chili powder

2 teaspoon black pepper

1 teaspoon salt

½ cup cooking oil



Bring all ingredients to a boil stirring constantly, reduce heat and simmer 10 minutes stirring occasionally.

Dissolve 3 tablespoons of cornstarch in ¼ cup of cold water and mix into a paste.

Slowly stir cornstarch paste into sauce and simmer to thicken to desired consistency. Makes about 2 quarts.
Never met a cow I didn't like with a little salt and pepper.
