I cooked this one last night, we had leftovers tonight. Everyone asked for second helpings both nights. It makes a sweet, hearty sauce, especially if you use a whole chicken:
In a Large pot or Dutch oven:
2 Tbl Olive Oil
2 Tbl Chopped Garlic, heaping
1 Large yellow onion, chopped fine
1 Large red bell pepper, chopped fine
4 Stalks celery, chopped fine
4 Large carrots, chopped fine
Salt and Pepper to taste
Cook over high heat until translucent.
Deglaze pan with 1 cup red wine
Add 1 cup chicken stock (optional)
Add 2-28oz cans crushed tomatoes
Bring to a soft boil, then reduce heat, cover and simmer for about 2 hours or until the veggies melt away.
Check salt / pepper and serve. Add red pepper to kick it up a notch.
Variation:
Add 1 whole Chicken instead of stock

Well whut is a person supposed to do with the finished product? Thanks. I am taking a wild guess it be for some kinda pasta topping maybe? Soup perhaps? Seems a little thin for sandwiches. Now aint gonna nag about the Trinity being out of proportion cuz this be Eyetalian Food, right? Figger if they got a hold of celery...they prob swiped it from the Greeks like everything else they got. Now this is whut I heard a Greek fella say one time. Aint saying it a true story by any means:)
