Re: splenda anyone
Splenda works pretty good as an end sweetner but not so well for baking. Splenda makes a version of their product that measures ounce for ounce like refined sugar but you still need to use a 50/50 mix of Splenda/Sugar for somewhat decent baked results.
I've heard that there is a new "natural" sweetner with zero calories but its name eludes me just now.
Know that using sugar substitutes can create other issues with the body. Those undigestable alcohol thingies have a tendency to stay in the gut and build up. Ask your Doc what he thinks.

I use Blue Agave in my coffee, tastes pretty good...all natural, not sure if its an acceptable substitute for sugar in your situation.

You need to bookmark this site: http://www.diabetes.org/
It has been my friend for a very long time. I was able to take "borderline" diabetic status to "fat and need to loose weight" status. Splenda cooks better than others, but it is better in the raw state. I make Paula Dean's Peanut Butter cookies recipe she has and it calls for Splenda. I like Truvia better than Splenda for Ice Tea and coffee. Splenda is good in no bake stuff like cheesecakes and most of your jello and puddings out there that are "sugar free" use it.

Agave nectar is a great replacement for sugar from what I've heard.
